Sweet Rice

Sweet Rice

- 1/2-1 TBS vegetable oil
- 1/2 of white onion, chopped (add more or less to your taste)
- 1/2 bunch cilantro
- 1 1/3 cup white rice
- 3 cups chicken broth
- 1/4- 1/2 cup white sugar

1- Put a little oil in bottom of pan
2- Saute chopped onion until translucent. Add the chopped cilantro (no big stems) and saute a minute more.
3- Add the rice, cooking until its light brown (be careful not to burn)
4- Combine the chicken broth and sugar, letting sugar dissolve. Then stir into rice until combined. Bring to a boil
5- Cover and let cook on low, med-low until rice is done about 25-30 min. Fluff with fork before serving.

*Serves 6-8
*The amount of surgar makes it very sweet. You can alter the amount of sugar inf you would like, just remember it is supposed to be sweet! Also, let the sugar dissolve in the stock so you won't have sugar that has sunk to the bottom of the pan.

Cafe Rio Sweet Pork

Cafe Rio Sweet Pork

- Pork Tenderloin
- 1 160z bottle pace red taco sauce
- 1 cup brown sugar
-1 12oz can of coca cola

Put tenderloin in crock pot with liner. Cook on high 4-5 hours or until pork is easy to shred. Take pork out of crock pot and throw liner away. There will be a lot of fat, remove fat and shred meat. Put in new liner and add shredded pork. Add rest of ingredients and let cook on low 1-2 hours. Serve with tortillas or as a salad, tacos, or burritos.

Banana Bread

Banana Bread (Becky's recipe)

Ingredients

1 stick (1/2 cup) butter, softened
1 cup sugar
2 eggs
4 bananas, masheds
2 cup flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon vanilla
1 cup chopped pecans or walnuts

Directions

In a mixing bowl, beat together butter, sugar and eggs until fluffy and well mix. Beat in bananas. Add flour, soda, salt and vanilla; blend lightly but thoroughly *(don't over mix it will make the bread tough). Stir in nuts. Grease and lightly flour (or spray with vegetable spray) a 9x5x4 inch loaf pan. Pour batter into pan and bake at 350 degrees for 40 to 45 minutes, until done. Makes 1 loaf

Egg nog

Robyn's Egg Nog

2 Eggs
1 Can Eagle Brand Milk (sweetened condensed)
1 Tsp. Vanilla
1/4 Tsp. Salt
1 Quart Whole Milk
1/2 Pint Heavy Whipping Cream Whipped
Nutmeg to taste

Directions:
1- Beat eggs
2- Add all except milk and cream
3- Gradually beat in milk
4- Fold in cream

Oatmeal Chocolate Chip Cookies

- 1 Cup butter (not soft)
- 1 Cup sugar
- 1 cup brown sugar
- 2 tsp vanilla
- 2 eggs
- 2 cups flour
- 1 tsp soda
- 1 tsp baking powder
- 1 tsp salt
- 1/2 cup wheat germ
- 2 Cups quick oats

- 1 cup or more milk chocolate chips- stir these in
- 1 cup or more semi sweet chocolate chips- stir these in

Keep dough cold before baking

Bake at 375 degrees for 8-10 min

Peanut Butter Sandwich Cookies

- 1 Cup butter
- 1 cup creamy peanut butter
- 1 Cup sugar
- 1 Cup packed brown sugar
- 1 tsp vanilla
- 3 Eggs
- 3 cups flour
- 2 tsp baking soda
- 1/2 tsp salt

Filling
- 1 cup creamy peanut butter
- 1/2 cup real butter, softened
- 4 Cups powdered sugar
- 2 tsp vanilla
- 5-6 Tbsp milk

For the cookies

1- Preheat the oven to 375 degrees

2- Cream shortening, PB, and sugars together until light and fluffy ( about 2 minutes) Add in vanilla, and eggs one at a time. In a separate bowl whisk together flour, baking soda, and salt. Add to dough. Mix to combine. (The dough will be very soft, that is normal)

3- Roll into SMALL balls, roll in sugar, place on cookie sheet (no need to grease it) and d the fork criss-cross thing

4- Bake for 6-7 minutes. You want them to stay super soft, so don't let them get brown. Remove from the pan and cool on cooling reack.

Filling

1- whip the PB and butter together until smooth. Add powdered sugar and vanilla. Then add milk one TBS at a time. You may not need it at all. You want the filling to be on the thick side, it should have just enough milk in it t make it easily spreadable. If you add too much milk it might squish out of the cookie

2- you can put filling in a piping bag.

Yields about 8 dozen cookies, which makes about 4 dozen sandwich cookies.

*Even better the 2nd day.
